Thanksgiving Day cooking schedule: what goes in the oven when, hour by hour
A Thanksgiving Day cooking schedule counted back from the time you sit down: when the turkey goes in, what bakes while it rests, what cooks on the stove, and what to make the day before so the oven never runs out of room.
On Thanksgiving Day the problem is not the recipes. It is the oven. The turkey fills it for most of the day, and the stuffing, the casseroles and the rolls all want it in the same last hour.
The fix is to start from the time you sit down and count backwards, so each dish gets its turn. Here is how to build that schedule, with an example for 12 guests sitting down at 4:00 PM.
Step 1: Pick the sit-down time and the turkey size
- Choose the time you want to eat, and write it at the bottom of a blank page. Everything counts back from it.
- Plan about 1.5 lb of turkey a person if you want leftovers. For 12 guests that is about 18 lb; a 16 lb bird with a few sides to spare works too.
- Thaw a frozen turkey in the fridge, about one day for every 4 lb. A 16 lb bird goes into the fridge on the Saturday or Sunday before.
Work out the thaw day and roasting time for your turkey
Step 2: Count the turkey back from dinner
- Rest: 30 to 40 minutes under foil before carving. That half hour is when the other dishes get the oven.
- Roast: an unstuffed 14 to 18 lb turkey takes roughly 3 3/4 to 4 1/4 hours at 325°F. Times are a guide only.
- Done: the thickest part of the thigh reads 165°F on a meat thermometer. Go by the thermometer, not the clock.
- Add 30 minutes of slack for preheating and a slow bird.
Step 3: Move everything you can to the day before
- Bake the pies. They keep well overnight, and the oven is free.
- Make the cranberry sauce and chill it.
- Peel the potatoes and keep them covered in cold water in the fridge.
- Assemble the stuffing and the sweet potato casserole, ready to bake.
- Set the table, chill the drinks and clear a spot for the carving board.
Step 4: Give the oven to the sides while the turkey rests
When the turkey comes out, turn the oven up for the dishes that bake at the same temperature: stuffing, the sweet potato casserole, then the rolls for the last ten minutes. If two dishes need different temperatures, one of them moves to the day before, the slow cooker or the stove.
Step 5: Run the stove in the last hour
- Potatoes: start boiling about 1 hour 45 minutes before dinner, mash and keep warm with the lid on.
- Green beans: cook in the last 30 minutes.
- Gravy: make it from the drippings while the turkey rests.
- Warm the cranberry sauce only if you serve it warm.
An example day: 12 guests, sitting down at 4:00 PM
| Illustrative time | Oven | Stove and counter |
|---|---|---|
| 10:15 AM | Preheat to 325°F | Turkey out of the fridge, patted dry and seasoned |
| 10:45 AM | Turkey in (16 lb, unstuffed) | Set out serving dishes and spoons |
| 1:30 PM | Turkey: first thermometer check | Take the stuffing and casserole out of the fridge |
| 2:15 PM | Turkey roasting | Potatoes on to boil |
| 2:45 PM | Turkey out when the thigh reads 165°F, then rest | Mash the potatoes, keep warm |
| 2:50 PM | Up to 350°F: stuffing and sweet potato casserole in | Make the gravy from the drippings |
| 3:30 PM | Casseroles out, rolls in for 10 minutes | Green beans on, carve the turkey |
| 3:45 PM | Oven off | Everything onto the table |
| 4:00 PM | Sit down |
The example is a guide, not a recipe: check your own recipes for temperatures and times, and the turkey is done only when the thermometer says so.

Quick answers
What time should the turkey go in? Count back from your sit-down time: about 40 minutes of resting, the roasting time for its weight, and 30 minutes of slack. For a 16 lb turkey and a 4:00 PM dinner, that is late morning.
How do I fit everything in one oven? Bake the pies the day before, use the turkey's resting time for the casseroles, and move anything at a different temperature to the stove, the slow cooker or the day before.
Can I change the dinner time on the day? Yes, if you move every time by the same amount. The order stays the same; only the clock changes.
What is in the Holiday Dinner Game Plan?
It is a finished plan for Excel and Google Sheets, with one workbook each for 6, 12 and 24 guests. You type your date and sit-down time, and every step of the day moves with it: an oven schedule timed back from dinner and checked so no two dishes need the oven at different temperatures, and a printable kitchen timeline in 15-minute steps.
Each plan has a classic turkey dinner menu with amounts for that table, a countdown from a week out with the thaw and shopping days dated, a grocery list with who buys what and each person's share of the bill, and a guest list with diets and allergies. It is $9.99.
